I joined Progress321 in 2018 when One Region One Table was in its third year! It was such an incredible experience because that was the first year we introduced expat chefs. I remember Chef Estaban Escobar was the featured Chef and Congresswoman Veronica Escobar was so proud to be at the dinner because that was her little brother who went on to be a famous chef in the Bay Area and Austin. Fast forward and we are in our 9th year of One Region One Table, and today we have the opportunity to help so many more regional future culinary talents share their passion with the world through food! At Progress321 we get together for unique culinary experiences called Gastronomy Nights, and here I am with fellow Progressors and their friends with Chef Andres Pablos of Accá. He is a graduate of the Culinary Institute of America, Andres has trained in some of the world’s most celebrated kitchens, including Alinea (Chicago), Noma (Copenhagen & Tulum), 108 (Copenhagen), and Akelarre (San Sebastián).

In 2023 he opened Accá to bring his international experience home, creating a space where food feels like comfort and connection. The restaurant is best known for its monthly 7–8 course tasting menus with wine pairings which he did especially for us that night. Fun fact! This is the same location, my Grandfather Gilbert Cordova owned a bar called Charlie’s Bar in the 1960s-1970s. I love dining there knowing that this little restaurant has a little piece of my familiy’s history.
